Prosecco Brut Rosé 2022
The rosé version of Prosecco is a novelty on the market starting from the 2020 harvest. To ensure a high quality standard, the Prosecco rosé is vintage, that is produced only with grapes from a single harvest, and the grape yields of Pinot Noir are contained, in order to guarantee intensity and structure. The lightness and freshness of Prosecco is however maintained in a key of greater complexity.
The Glera grapes are pressed and the free-run must ferments without skins at a low temperature in stainless steel vats. The Pinot Noir instead ferments in steel vats with maceration on the skins, obtaining a red wine. The two wines are then blended before proceeding to the second fermentation in autoclave according to the Tank Method. The sparkling wine remains in an autoclave in contact with the lees for at least 2 months.
Paladin's Prosecco Rosé is linked to LILT's “pink ribbon” campaign, donating part of the proceeds to medical research.
