Sapaio 2019
Like the great Château of Bordeaux, Podere Sapaio makes a great wine in a limited number of bottles, with the selection of the best grapes and gives it the name of the estate. Sapaio wine was born as Bolgheri Superiore DOC, but since the winery also acquired vineyards in the neighboring municipality of Bibbona, it had to give up the DOC. The style of the wine, however, has not changed, rather it has improved, in fact the hills of Bibbona are the natural continuation of the hills of Bolgheri and have compact soil, particularly suitable for the cultivation of Cabernet and Merlot and benefit from the same climate and the same brightness coming from the sea at west.
The grapes are harvested by hand. They ferment in steel vats at a controlled temperature with a long maceration on the skins. The wine ages for 18 months in French oak barriques.

Colour: deep ruby red.
perfume: pronounced, cedar wood, black currant, dark chocolate, spices.
Taste: full body, precise ripe tannins, velvety texture, long.
Suggestions
It is enjoyable now, but it can age for many years. Serve it in large glasses. The best pairing is with game, for instance stewed venison.
