Pitto San Gimignano Doc Tollena is a red wine produced by Tollena, a winery located in the hills of San Gimignano, Tuscany. It is made from a blend of Sangiovese (80%) and Cabernet Sauvignon (20%) grapes, grown in vineyards located at an altitude of approximately 214 metres above sea level, on sandy soils with interlayers of clay and pebbles.

The grapes are harvested by hand when they reach perfect ripeness. After destemming and crushing, they ferment at a controlled temperature of about 28°C for about 20 days. The wine then matures in the bottle for at least 12 months.
