Amarone Le Poiane is a complex and characteristic red wine produced with long dried and therefore concentrated grapes. It inherits a tradition that began in the Bolla winery in 1950, when Amarone was produced for the first time. The grapes come from vineyards in the classic area of Valpolicella, the one that is most affected by the influence of Lake Garda on the climate. This favors the elegant character of the wine's smell and taste. Amarone Le Poiane is based on native grapes, typical of the Veronese area: Corvina, Corvinone and Rondinella and on a long aging.
After the harvest, the grapes are left to dry for a few months and the weight is greatly reduced due to water evaporation. Sugars and other substances are concentrated and turn into a dense must that ferments slowly. The wine then undergoes malolactic fermentation too and ages for two years in barrique and large cask.
