Coppery Pinot grigio is a still white, usually mistaken for a rosé, because of its color tending toward coppery. The color is given by the type of winemaking, which involves maceration on the skins of pinot grigio, which, being coppery in color by nature, yield these hues to the must.
The grapes, once transported to the winery, are totally crushed and undergo a pre-fermentative maceration at 8°C for about 12 hours. Alcoholic fermentation in reduction lasts for 8 days and is carried out at a temperature of 16/17°C. Once fermentation is complete, the wine is aged in cement tanks with its fine lees for 6 months.
