Pecorino 2022
The Pecorino grape variety was very popular in the Marche and Abruzzo in the past; following the vineyards’ destruction by the phylloxera parasite in the early 1900s, it had almost disappeared. In recent times it has been recovered and processed in purity, as it gives wines rich in character thanks to its firm acidity. The Pecorino grapes of this Belisario’s wine come from hills near the coastline at 200-250 meters above sea level in Abruzzo, in the province of Chieti.
The free-run must resulting from a soft vacuum pressing is clarified by natural cold decanting. Then it ferments in stainless steel vats at a controlled temperature with the addition of selected yeasts. The wine ages in steel vats for 5 months before being bottled.
