Orfeo 1969 Valdobbiadene Prosecco Superiore DOCG Rive di Santo Stefano Millesimato Brut
ORFEO 1969 Valdobbiadene Prosecco Superiore DOCG Rive di Santo Stefano Millesimato Brut is a sparkling wine produced by Cantine Varaschin, a historic winery located in the Prosecco Superiore DOCG area in Veneto, Italy.
Millesimato Brut, which means it is made from grapes of a single vintage and has a very low residual sugar content (less than 3 g/l). It is produced with selected Glera grapes from the hillside vineyards of Santo Stefano di Valdobbiadene, an area particularly suited for the production of Prosecco Superiore DOCG. The grapes are harvested by hand and vinified using the Charmat method, which involves a second fermentation in an autoclave.
The wine remains on the lees for a variable period, which can range from a few months to several years. During this period, the wine acquires complexity and harmony.
In the case of long ageing, the wine undergoes batonnage, i.e. periodic stirring of the yeasts, to encourage their autolysis and the enhancement of their aromatic characteristics.
For vintage wines such as ORFEO 1969, further bottle ageing is foreseen before release.
