Vivia is an invented word that recalls 3 grape varieties: Vermentino, Viognier and Ansonica. Vementino and Ansonica are typical of Tuscany coast, while Viognier is a French grape, originally from the Rhone Valley. Their combination is lucky: Vermentino is lean with notes of flowers and citrus, Ansonica is fruity and rounded, Viognier is smooth and has aromas of apricot and exotic fruit.
The harvest takes place between August and September to have particularly fragrant grapes. Alcoholic fermentation takes place in steel vats at low temperature separately for each grape variety. The wine remains for a few months in steel with its own yeasts to fix the aromatic compounds and is subsequently bottled to be placed on the market 6 months after the harvest.
