Borgo Maragliano's Marajan is a truly interesting Piedmontese white wine with unique characteristics that make it appreciated by lovers of good wine. The vinification of Marajan is a process that aims to enhance the unique characteristics of the Chardonnay grape variety and the Piedmontese terroir. Harvesting is carried out exclusively by hand, selecting only the healthiest and ripest grapes. This operation is essential to guarantee the quality of the grapes and, consequently, of the final wine. The grapes are pressed softly, without the use of stems, to obtain a high quality must, rich in aromas and fruity flavours. The must is fermented at controlled temperatures, around 10-11°C. This technique preserves the primary aromas of the fruit and produces a fresh, fragrant wine. At the end of fermentation, the wine matures on the fine lees for approximately 7 months. During this period, the wine undergoes frequent pumping over, which is intended to enrich the wine with aromatic notes and make it more complex and structured. After maturing on the fine lees, the wine is bottled and aged in the bottle for at least two years. This long period of ageing allows the wine to reach its full maturity and develop a broader and more complex aromatic bouquet.
