Le Pas du Moine is a rosé wine from Provence, made from grapes from vineyards located between Côtes de Provence and Côtes de Provence SainteVictoire.

Harvesting is at night, so the grapes are picked at a low temperature. Direct soft pressing follows and the grapes are cold stabilized for a week. Decanting and fermentation also take place at a low temperature of 13-14°C, so as to preserve color and aromas.

Colour: peachy pink.

perfume: exotic fruit, lychee, mango, citrus and pomelo.

Taste: structured, subtle sweetness, with a nice long, aromatic finish.

Suggestions

Try it with a poke bowl with salmon, shrimp, avocado and grapefruit, or with a ham and melon appetizer.
