This wine has been produced by Donnafugata since the 2014 harvest; it is a pure Catarratto coming from the hills of the Contessa Entellina township at 200-400 meters above sea level. The name “Prio” in the local dialect means happiness and joy, in fact the wine stands out for its youthful and citrusy fragrance that infuses liveliness with every sip. Catarratto is the most common white grape in Sicily, especially in the provinces of Palermo, Trapani and Agrigento and is the basis of many traditional white wines such as Alcamo and Monreale. It is a vigorous grape variety and ripens late, which is why it can retain fresh acidity even in hot Sicily. It gives wines with good structure and flavor, with aromas of citrus and aromatic herbs.The yields are limited to 75-85 quintals of grapes per hectare. The harvest took place in the first ten days of September. The grapes are pressed to extract the must which ferments in steel vats at a controlled temperature of 14-16 ° C. The wine does not undergo malolactic fermentation and rests in steel vats for 2 months before being bottled, maintaining all the youthful vivacity.
