    Giusto di Notri 2020

    The Giusto dei Notri red wine has been produced since 1992 by the Tua Rita winery in the metalliferous hills of the Val di Cornia, near Suvereto in the province of Livorno. The name is inspired by the church of San Giusto di Suvereto. Notri is the toponym of the place where the vineyards are located. It is an artisanal wine, produced in a limited number of bottles by a small family-run winery. Tua Rita's Giusto dei Notri is a Bordeaux blend with a prevalence of Cabernet sauvignon, as if it were a Pauillac. It has a rigorous, complex and elegant taste, fascinating both when young and with evolution. It comes from a high-density plant: 8500 plants per hectare on a clayey and partly silty soil, with an abundance of stones. The vineyard is located at the base of the Metalliferous Hills parallel to the Tuscan coast and for this reason it is rich in mineral elements that contribute to the quality of the wines.

    The grapes are hand-picked and carefully selected. Only the first choice of grapes is used for the production of Giusto dei Notri. Alcoholic fermentation takes place in conical oak vats with a maceration of 25-30 days during which pumping over and punching down are carried out. Subsequently the wine ages for 18 months in new and used French oak barriques.

    Suggestions

    It can age for many years. We recommend serving it in wide wine glasses and you can eventually decant it. At meals it matches cage, le for example stewed wild boar.
