Pavò’s Franciacorta Nature is the most extreme and essential version of Franciacorta that reveals the potential of the territory. The wine is completely dry, but with good taste development thanks to the wise use of wood both in the fermentation and aging of the base wines.
The base wines ferment partly in steel and partly in oak. They also carry out malolactic fermentation and age for a few months in barrique. After the second fermentation in the bottle according to the traditional method, the sparkling wine ages on the lees for 24 months. It is not dosed.

It can be uncorked as an aperitif but we also recommend it with raw fish
