Franciacorta Brut Rosé Cabochon Fuoriserie N. 07
All Franciacorta Cabochon are obtained from a particular selection of grapes from the historic Monterossa vineyards and represent excellent products. Cabochon Rosé Fuoriserie N. 06 is made with grapes from the municipalities of Bornato and Brescia. The vineyards are located in the middle of the morainic amphitheater that characterizes the territory of Franciacorta with soil formed by debris and mineral accumulations. Furthermore, the area is always ventilated following the exchange of air between the Po valley and Lake Iseo. Pinot Noir is vinified with a very short maceration to give the sparkling wine a pale pink hue. A partial use of oak barrels and reserve wines from previous vintages contribute to the complexity and depth of the taste, which is still fresh and elegant, as befits a great Franciacorta.
The grapes are vinified separately by variety and by vineyard of origin. The Pinot Noir grapes undergo a light maceration and produce a rosé base wine. The alcoholic fermentation of the base wines takes place partly in steel and partly in barrique. The cuvée includes 20% reserve wines from previous vintages. After the second fermentation in the bottle according to the classic method, the sparkling wine matures on the lees in the bottle for over 40 months.
