    Franciacorta Brut Cabochon Fuoriserie N. 024 Magnum

    Cabochon is a line of excellent Franciacorta created by the Monte Rossa winery, selecting the best grapes in the most suitable vineyards of the property. Cabochon Fuoriserie N. 023 has a complex and alluring bouquet; it has a sustained taste to the point of being mor a wine for meals rather than for an aperitif. Chardonnay and Pinot noir grapes come from some crus in the townships of Bornato and Brescia. The vineyards are conditioned by the air currents that blow between the Po Valley and Lake Iseo. Cabochon Fuoriserie N. 023 is a Franciacorta with a classic style, in which Chardonnay prevails in the blend; this guarantees elegance, while the minority part of Pinot Noir makes a contribution in terms of roundness and increases the flavor complexity.

    Wine making is separated not only by grape variety but also by single vineyard of origin. The grapes are gently pressed and only the first pressing is used for the production of Cabochon Fuoriserie N.023. The alcoholic fermentation of the base wines takes place in barrique. The cuvée is made up of 80% wines from the last harvest and 20% of reserve wines stored in the cellar. After the second fermentation, the sparkling wine ges on the lees in the bottle for 3 years.

    Suggestions

    Serve it in large flutes or alternatively in white wine glasses. It is recommended at meals, try it with oysters au gratin.
