Vie Cave 2021
Vie Cave is a modern 100% Malbec wine, that Antinori has experimented in Sovana (Tuscany) since the 2000s. Malbec is a French grape-variety, but it is scarcely grown in France nowadays; it is on the contrary cultivated in other continents. It is considered in fact the national grape-variety of Argentina; Malbec wines from Argentina are very popular in wine lists worldwide. As a grape it has a high level of phenols, giving deep colored and concentrated wines, sometimes even tannic.
Vie Cave’s Malbec grows on volcanic soil. 2017 summer was hot and facilitated a perfect ripening from all respects. After destemming and crushing, the grape have undergone alcoholic fermentation in steel tank at a controlled temperature with one week of delicate maceration, in order to extract only color and sweet tannins. Malolactic fermentation was completed in barrique, where the wine ha aged for 10 months. It has aged one more year in bottle before it could be sold.
