Falerio Pecorino 2021
Pecorino is a native grape variety of the high hills of the Marche and Abruzzo, which has found a suitable habitat in particular in the province of Ascoli Piceno. In fact, the Pecorino grapes of this Casalfarneto’s white wine come from the inner Piceno hills, which fall within the DOC Falerio, where the vineyards extend over compact and clayey soils, facing south-east and enjoy excellent brightness and a climate that is not too hot in relation to altitude. In these conditions Pecorino ripens accumulating sugars and retaining acidity, therefore Pecorino wine has a distinct taste in freshness. From the 90s onwards, the production of pure Pecorino has increased and the wines are appreciated for the aromas of citrus fruit, white fruit, herbs and for their generous taste. Falerio Pecorino is a typical wine from the high inland hills of southern Marche.
The harvest takes place between late September and early October at the right ratio of acids and sugars in the grapes. The bunches are gently pressed and the liquid must ferments in stainless steel vats at a controlled temperature. The wine then ages in steel for at least 3 months before being bottled.
