Falanghina del Sannio Serrocielo 2022
Falanghina del Sannio is a particular variety of Falanghina, also called Falanghina beneventana, widespread in the hilly area of the province of Benevento, where it enjoys a cool climate, which allows the development of refined and complex aromas. The clayey and calcareous soil of the hills of the Sannio area gives Falanghina fuller body and predisposition to aging. Serracielo white wine belongs to the "Selezioni" line of Feudi di San Gregorio, designed mainly for haute cuisine. It is in fact proposed in an original and elegant bottle designed by Massimo Vignelli.
After careful selection, the Falanghina grapes are pressed and the liquid must ferment in steel vats at a controlled temperature kept low. At the end, the wine ages for 5-6 months in steel vats on its own yeasts; frequent bâtonnage is practiced to keep the lees in suspension in order to enrich the wine.
