Etna Bianco 2022
Cottanera’s Etna Bianco wine is an essential expression of the typical character of the volcanic white wines of Etna, recognizable in the marked aromas and refreshing acidity. In its production, only Carricante grapes are used, coming from three different Contrade in the municipality of Castiglione di Sicilia, on the north side: Cottanera, Feudo di Mezzo and Diciasettesalme. The vineyards are on average 30 years old and are located at different altitude levels between 680 and 750 meters above sea level. This determines a mild climate although it is in Sicily with very high diurnal temperature ranges. The soil is of alluvial origin formed by the disintegration of lava rock. The plants are partly trained with spurred cordon and partly are bush-trained.
The harvest is manual in boxes at the end of September. The grapes are left to cold macerate for 24 hours, after which they are pressed and the free-run must is clarified by static decantation. Alcoholic fermentation takes place in stainless steel vats at a controlled temperature. The wine ages on the lees in steel tanks for 6 months.
