Dolium Bonarda Vino Frizzante
Bonarda dell'Oltrepò Pavese, Dolium, is a fine DOC wine produced from grapes grown in the province of Pavia. It has a bright ruby colour and an intense fruity aroma. It is predominantly dry on the palate, with the right level of tannins. It pairs perfectly with cured meats, first courses with structured sauces and meat main courses. Vinification involves maceration of the destemmed grapes in steel tanks for 6 to 8 days. This process gives the wine a slight residual sugar necessary for re-fermentation in autoclaves, which will give it its characteristic sparkling aroma. The flavour is soft and persuasive with notes of fresh red fruits, including wild strawberries and blueberries. Bonarda Dolium is a versatile and ideal wine for conviviality, also suitable for accompanying delicious ragout dishes, soups and cheeses.
