Cuvée '17-'18 Spumante Extra Brut
The blend si composed of 65% Chardonnay and 35% Pinot Noir, the grapes are harvested from different plots of land, located at different altitudes (Cembra at 450 m, Faedo at 500 m, Palai at 700 m). Depending on the area there are different soils:sandy and rich in pebbles in Valbona, inFaedo a soil where there Is a platform of volcanic rock and a deposit of sandstone, limestone and siltstone. Of note Is the use of the hourglass technique for fermentation;this technique consista of turning the barrel 180° weekly ti optimize contact between yeast and wine.In the spring, refermentation in the bottle Is carried out by combining cuvees of two vintages and two different varieties. Disgorgement Is carried out after at least 36 months of aging on the lees.As this wine ages, It tenda ti show the typical Chardonnay scents and is enriched with an intense and varietal bouquet of odors.
