Crémant de Loire is a sparkling wine produced in the Loire region of France. Unlike Champagne, which has an appellation d'origine contrôlée (AOC), Crémant de Loire has a protected designation of origin (PDO), a European recognition that guarantees the origin and quality of the product. Harvesting is done by hand to ensure the maximum integrity of the grapes and careful selection of the bunches. Pressing is soft to extract the must flower, the most valuable part of the grape, rich in aromas and sugars. The must is fermented a first time in steel to obtain a fresh and fruity base wine. Each bottle is filled with the base wine, adding yeast and a small amount of sugar. The bottles are placed horizontally on pupitres and regularly turned (remuage) to allow the yeast to slide towards the neck of the bottle. A second fermentation takes place inside the bottle, which produces carbon dioxide and creates the characteristic bubbles. The bottle is corked with a cork and a cage.The neck of the bottle is frozen to solidify the yeasts, which are then expelled (deboulonnage). The bottle is corked with a new cork and cage.
