Castello della Sala is a very large estate in southern Umbria near Orvieto, owned by the Antinori. The area of Orvieto is historically suited for the production of white wines. The vineyards have sedimentary soil, with limestone and very old marine fossils mixed with a varied percentage of clay. Piero Antinori and Renzo Cotarella have decided to cultivate some of the finest white grape varieties on the Castello della Sala estate, such as Chardonnay, Sauvignon blanc, Riesling, etc.
Conte della Vipera is produced according to the winning model of Bordeaux whites: it is based on Sauvignon blanc with an important contribution from Sémillon. Sauvignon blanc gives the wine pronounced and pungent aromas of herbs, citrus and tropical fruit and a precious acid backbone. On the contrary, Sémillon is low in acidity and contributes to the roundness of the taste. The blend of Conte della Vipera is absolutely successful and turns into a modern, crisp and fragrant wine, which is irresistible.
The harvest is manual and the grapes are immediately chilled before being pressed. After pressing, the free-run must is clarified by natural cold decantation. It ferments at a controlled temperature in stainless steel vats and remains in steel at a low temperature until bottling without carrying out the malolactic fermentation.
