Collio Malvasia Soluna 2021
Soluna is a rich Istrian Malvasia obtained from slightly dried grapes and therefore concentrated due to partial dehydration. It comes from a suitable vineyard in Ruttars in the western Collio at 150 m above sea level. The soil is the typical "ponca" of these hills, an ancient geological formation made up of layers of clayey and partly calcareous marl.
The harvest is manual in small boxes. The grapes are left for 10 days outdoors to dry slightly under the sun and the moon (hence the name of the wine: “sole” is sun and “luna” is moon in Italian). A cryomaceration in the press precedes fermentation. The free-run must ferments in steel vats at a controlled temperature and ages on its own lees for about 6 months before bottling.
