Collio Chardonnay 2021

Conti Formentini’s Chardonnay has the voluptuous and well-rounded taste typical of the grape variety, but also retains freshness, thanks to only partial use of the barrels in wine making. In fact, Chardonnay is a versatile grape, its homeland is cool, Burgundy, but Chardonna can adapt to different environments, giving life to a broad spectrum of white wine styles. The Conti Formentini winery has adopted a respectful processing of the grapes, aimed at expressing the Friuli territory and not just the varietal. In fact, the Chardonnay grapes of this white wine come from the suitable hills of the Collio, where wines tend to be structured and precise. The strong points of the Collio are the proximity to the Adriatic sea, which mitigates the microclimate, and the characteristic soil formed by clay-limestone marl alternating with sandstone. After the harvest, the grapes are subjected to cryomaceration for a few hours. They are then pressed to extract the must. Part of this ferments in stainless steel vats at a controlled temperature; the other part ferments in barrels and barriques. Furthermore, the wine remains in contact with the fermentation lees for a few months with bâtonnage.
