Cococciola 2023
Cococciola is a native Abruzzo white grape variety with limited diffusion to some villages in the province of Chieti. It is also partly found in the north of Puglia. It is a late ripening variety that gives fruity wines with herbaceous notes as well. For a long time it was used only as a complement to Trebbiano d'Abruzzo, to which it brought freshness, having a good acidic content. Only in recent times it happens to find it vinified in purity, when the search for typical and characteristic products has become trendy. Hence Tenuta Ulisse has decided to produce a wine from 100% Cococciola grapes.
Once arrived in the cellar, the whole grapes are cooled and a short cryomaceration is carried out. They are then de-stemmed and pressed in a reductive environment, that is, without contact with oxygen. The must is clarified by cold static decantation and ferments in steel vat at a very low temperature to preserve the integrity and purity of the aromas. The wine stays in steel until bottling.
