Cimaio 2017 IGT
Casalfarneto’s Cimaio is a powerful and complex Verdicchio wine; it is the result of a modern concept of harvest, since it is made in November. Over-ripening on the plant increases the sugars contained in the grapes and botrytis cinerea (noble rot) attacks the grapes by concentrating glycerin and gluconic acid.
This harvest approach determines the creation of a must with a very high potential alcohol; fermentation is carried out in barrique and steel vats. The maturation takes place for 6 months in steel and barrique, followed by a further 6 months in steel and another 12-18 months in the bottle before being released on the market.
