    Chianti Classico Cultus Riserva 2018 Bio

    Until the 2016 vintage, the wine was called Chianti Classico Riserva Cultus Boni. From the 2017 harvest the name was shortened to just “Cultus”. It is a modern interpretation of Chianti Classico with aging in woods of different sizes, including barriques, to obtain a full, round and immediate taste. The wine, however, maintains a close link with the territory and tradition, as historical Tuscan vine varieties have been chosen as complementary of Sangiovese to the extent of 20%, such as Canaiolo, Ciliegiolo, Malvasia nera, Foglia tonda, Mammolo, Pugnitello and Sanforte. The grapes come partly from the village of Gaiole in Chianti and partly from the village of Castelnuovo Berardenga; the vineyards are located at 270-360 meters above sea level, they face mainly south and have a limestone clay soil.

    Alcoholic fermentation takes place with spontaneous yeasts in steel vats at a controlled temperature. The contact with the skins lasts for a total of 40 days during which punching down is carried out to facilitate the extraction of color and tannins. The wine then undergoes malolactic fermentation and ages for two years in barrels of various sizes and French oak barriques.

    Taste: full body, supple, balanced, silky tannins, delicious savory and lingering finish.

    You can enjoy it now even though it can age further in the bottle. A food pairing that will not disappoint: roast pork loin with thyme potatoes.
