Barsac "Grand Vin de Sauternes" is the wine that best represents Château Simon's identity and dedication. It is produced from the three varieties the winery focuses on: Sémillon, which is widely grown in the region, Sauvignon Blanc and Muscadelle. These varieties are specially treated with noble rot, produced by the fungus Botrytis cinerea, which is essential for the grape drying process.
Molded grapes produce this sweet white wine, aged for 18 months in French oak barrels. The result is a smooth, enveloping and widely evolved wine.

perfume: intense, with notes of exotic fruits and citrus.
Taste: round, fruity, rich and fresh; spicy notes emerge in the finish.
Suggestions
It can age for up to 15-20 years. Try it with traditional fois gras or at the end of a meal with dry pastries or dark chocolate.
