The Blanc de Noirs from Bouzy vineyards is an ode to Champagne's Pinot Noir. Lovers of blanc de noirs can't miss it. The village of Bouzy is in fact the most suitable for the cultivation of Pinot Noir in all of Champagne, it is the one from which Pinot Noir is also vinified in red as well as a sparkling base. The reason for this success is due to the fact that it is the warmest place in the Montagne de Reims and extends over a hilly slope entirely facing south. Furthermore, the subsoil of the vineyards is a deep block of chalk. In this bottle of Paul Clouet only Pinot noir from Bouzy, fermented as a white wine, is used and vin de réseve of the same Pinot noir from Bouzy are also used. In fact, the abbreviation MV stands for “Multi Vintage” because it is blend of different vintages of the same wine.
For the creation of the base wines, the grapes are gently pressed and the free-run must, after being clarified, is fermented in stainless steel vats. The base white wines also carry out malolactic fermentation and remain in steel in the cellar until the moment of creation of the cuvée. The cuvée includes the wine of the current year plus wines from previous vintages stored in the cellar. It is a multi-vintage of the same wine. After the second fermentation, the Champagne ages on the lees in bottle for at least 5 years. It is dosed with 6 g / l of sugar.
