The Bouzy Maison founded by Paul Clouet in 1907 is a small independent producer with only 5 hectares of vineyards between Bouzy and Chouilly: two grand cru villages, the first in the Montagne de Reims suited for Pinot Noir and the second in the Côte des Blancs suited for the Chardonnay. It is a Récoltant Manipulant, which means that it only works with its own grapes, also taking care of the cultivation of vineyards. Most of the vineyards are various plots around the winery headquarters in Bouzy. Paul Clouet is in fact a name strongly linked to Bouzy's Pinot noir, the real backbone of each of its Champagne. It is a small niche producer, but known to enthusiasts and critics alike. The Revue du Vin de France and the guide Bettane & Desseauve speak well of it.
Since 1992 the maison has been managed by Paul Clouet's granddaughter, Marie-Thérèse Bonnaire, whose children run the Bonnaire house in Cramant. It is precisely the children of Marie-Thérèse who take care of the bending of Paul Clouet's labels, which stand out for their fullness and roundness, without ever being heavy. Paul Clouet produces 50-60 thousand bottles a year divided between 6 labels: they are almost limited editions, not always easy to find.
