This is the non-vintage Champagne Brut at the base of the production range of Paul Clouet, a niche récoltant manipulant. 70% of the cuvée is made from black berried grapes, responsible for a certain structure and roundness, but that 30% of Chardonnay plays a decisive role in creating a perfect balance with a refreshing finish. The Pinot Noir comes from the grand cru commune of Bouzy in the Montagne de Reims and you can taste it! Wine making is respectful of the territory and the use of wines from previous vintages stored in the cellar gives completeness to the taste and uniformity over the years.

The base wines are produced with fermentation in stainless steel vats and all also carry out malolactic fermentation. No aging in wood is made. Vin de réserve from previous vintages are also used when creating the cuvée. The aging on the lees in the bottle is at least 24 months and at the disgorgement the Champagne is dosed with 7 g / l of sugar.
