Champagne Brut Réserve
Cuperly Champagne Brut Réserve is the result of a blend of base wines from 20 different vineyards with different soil characteristics. Some vineyards have sandy soil, in others clay or limestone prevails and some are vineyards on chalk blocks typical of Champagne. In addition, the cuvée is made up for a third of vin de réserve from previous vintages. The result is a balanced Champagne with a distinctive and elegant personality.
Only the free-run must resulting from the first pressing is used in the production of the base wines. These ferment in stainless steel vats at a controlled temperature. They do not carry out malolactic fermentation and do not touch wood. The vin de réserve from previous years are also stored in steel. The second fermentation takes place in the bottle according to the traditional method and the sparkling wine ages on the lees in bottles for at least 15 months. At disgorgement it is dosed with 7 g / l of sugar.
