Cervaro della Sala 2022
Cervaro della Sala is a legendary label, a reference point for Italian Chardonnay and is a wine that combines richness of taste and elegance. From a trip to Burgundy, the Marquis Piero Antinori together with the oenologist Renzo Cotarella (now CEO of the Marchesi Antinori) took inspiration to make a great white in the Umbrian estate of Castello della Sala. It was one of the first Italian white wines made with the use of barrique and won over the public of enthusiasts and not only thanks to its rich and well-rounded taste. It is a Chardonnay to which a touch of Grechetto, a local grape, is added, which contributes to the taste with its acidity and creates a direct link with the territory.
Chardonnay grapes are harvested with cool morning temperatures. They undergo a cryomaceration for 4-5 hours, after which they are pressed and the free-run must is left to clarify by decanting in steel. The fermentation of the Chardonnay takes place in barrique where the wine also carries out the malolactic fermentation and ages for 5 months. At this point the Grechetto, vinified only in steel, is blended with the Chardonnay and the wine ages in the bottle for several months.
