Cerasuolo D'Abruzzo 2023 Tenuta Ulisse
The Cerasuolo d'Abruzzo appellation is an Abruzzo DOC dedicated to rosé wines produced with the Montpulciano grape. The name “Cerasuolo” refers to the color of the wine, which is similar to the pulp of certain cherries. From the point of view of taste, it is a bold rosé, fruity and supple wine. The Montepulciano grape is a generous variety typical of Abruzzo and widespread in the east coast of Italy from the Marche to Puglia. It is appreciated because it gives intensely fruity wines with remarkable body. Even when vinified as a rosé, Montepulciano expresses its character prodigal in aromas and structure.
After the harvest, the grapes are immediately cooled and the whole bunches undergo a cryomaceration. They are then de-stemmed and pressed. The maceration of the must on the skins goes on for 12 hours. Then, by pressing in an oxygen-free environment, the liquid must is extracted and alcoholic fermentation takes place in stainless steel vats at a controlled temperature. Subsequently, the wine ages in steel until bottling.
