Chianti Classico by Castellare is made only with traditional grape varieties, almost pure Sangiovese indeed. Like all Chianti Classico from Castellina municipality it has body and balance, which make it enjoyable in its youth. The grapes come from various plots between 350 and 400 m above sea level with calcareous soil. Short pruning of plants is the basis for low yields; grapes ripen easily and give a concentrated juice. The label reproduces every year a species of bird that populates Tuscany; this evokes a principle of eco-sustainability, which is the basis of the production philosophy.

Alcoholic and malolactic fermentation are carried out in steel vats at a controlled temperature. Afterwards the wine ages for a few months in French oak barriques and tonneau.
