The Cannonau vines from which Cannonau di Sardegna Moro comes are partly bush trained and partly with spurred cordon in central Sardinia on predominantly clayey soils, with skeleton and basaltic elements.
The grapes are harvested in early October. They ferment in steel vats at a controlled temperature with maceration for 14 days. Half of the wine ages for 8 months in new and used tonneau, the other half in steel.
Features
Colour: lively ruby red.
perfume: cherry, raspberry, strawberry, rose petals and balsamic herbs.
Taste: fruity, warm, rather soft, with strong tannins, savory.
Suggestions
To be enjoyed in its youth in medium-sized glasses. At meals, it matches grilled meats. Try it with beef burger and barbecue sauce.
Recommended with: roasts, meat sauce pasta, charcuterie, hams and cold meat.
