Barolo Cerretta 2017
Cerretta is a geographical mention of the village of Serralungad’Alba, in particular it is configured as a hill in the northern part of the township. The land is the oldest in the Langhe, from the Elvezian period; Barolo Cerretta are rigid and suitable of long aging. For Prunotto this is the first vintage of a Barolo Cerretta and it is done in the most traditional way with maturation in large oak barrels. The 2017 vintage was hot and dry in the Langhe as in the rest of Italy. The production was poor, but for the Nebbiolo which has a long ripening cycle, the quality was nevertheless excellent. The grapes for the 2017 Barolo Cerretta were harvested on 20 September.
Alcoholic fermentation with maceration takes place in stainless steel vats at a controlled temperature. After 10 days of maceration the racking takes place. The wine undergoes malolactic fermentation and then ages for at least 18 months in oak barrels of various sizes.
