Asprinio d’Aversa Spumante Brut Trentapioli 2021
The name Trentapioli refers to the traditional growing system of the Asprinio grape: the "alberata"; it is a dedication to an ancient tradition still perpetuated in the Aversa area. Trentapioli is a modern and fascinating sparkling wine made with the Asprinio grapes cultivated with "alberata" training system. The vines are allowed to grow by climbing trees in height up to 20 meters. The harvest requires long ladders, to be precise they are 15-meter ladders with 30 rungs: one every 50 centimeters. The harvest takes place by hand by climbing these stairs leaning against the trees. This ancient method of growing vines is now widespread only in the Aversano area, where the native grape variety Asprinio is grown. Aprinio stands out for its high acidity, which is very suitable for sparkling wine making. Trentapioli sparkling wine is produced with a second fermentation in a pressurized tank and is proposed as a tasty and refreshing bubble, perfect for young and modern consumers.
The grapes are hand-picked and fermented in stainless steel vats at a controlled temperature. The base wine is then fermented again in an autoclave with the addition of yeasts and sugars for the second fermentation according to the tank method and rest on the lees for 50 days.
