Amarone della Valpolicella is a modern red wine that quickly became the most representative wine of the province of Verona. The traditional wine from which Amarone originated is in fact Recioto, a sweet passito wine. Amarone is the dry version, so it is a wine produced with dried grapes, but vinified as a dry wine. Since dried grapes have a high sugar concentration, the resulting wine has a high alcohol content. Amarone della Valpolicella is a robust and rich wine, aged for a long time in wooden barrels, has pronounced and persuasive aromas, it is a sensual wine much loved by VIPs. It represents luxury and a gourmet whim. The Amarone della Valpolicella La Groletta from the Corte Giara line is produced by the Allegrini family with grapes from various areas of Valpolicella. The grapes are dried for a long time in closed rooms; in this way they concentrate not only the sugars, but also all the other substances, such as perfumes, tannins, acids. The wines of the Corte Giara line represent modern versions of Venetian wines, produced with an efficient and modern vinification that makes the wines of the Veronese and Vicentine tradition affordable.
The grapes are harvested by hand, selecting only the whole and perfectly healthy bunches. These are laid out in crates and left to dry indoors in suitable rooms for 3-4 months with a 40% weight loss due to the evaporation of the water. Finally, the de-stemmed grapes are crushed and fermented in steel vats at a controlled temperature with maceration lasting up to 24 days with daily pumping over. Finally the wine ages for 15 months in oak barrels of various sizes, including second passage barriques.
