Alghero Torbato Spumante Brut
Torbato is an ancient Sardinian vine variety, typical of the Alghero area and has been rediscovered and enhanced by Sella & Mosca in its large estate. The soil of the vineyards is a former seabed, rich in limestone and enhances the personality of the grape variety, especially its exquisite acidity, so precious for the production of a sparkling wine. It is a sparkling wine obtained with the Charmat method, aimed to preserve all the aromas of the freshly gathered grapes, ideal as an aperitif or to be served with appetizers.
The grapes are pressed and the free-run must clears up by cold static decantation. Alcoholic fermentation is induced by selected yeasts in steel vats at a controlled temperature. Subsequently, the second fermentation takes place in an autoclave and the sparkling wine remains with the yeasts for a very short time.
