Aglianico del Vulture Don Anselmo 2016
The wine is dedicated to the founder Anselmo Paternoster and is the most important wine of the winery. For many years it was the Aglianico del Vulture of reference for the whole region. It is a full-bodied, complex and long-lived red wine. The grapes come from vineyards at an altitude, over 600 meters above sea level, with soil of volcanic origin. Paternoster's experience led to the harvest and vinification of each parcel separately and only subsequently to decide on the assembly for the great Don Anselmo wine. However, most of the grapes come from plants over 50 years old in the Contrada Gelosia area, which give very low yields: not even 40 quintals per hectare.
After the harvest the grapes are de-stemmed and the alcoholic fermentation takes place in steel vats at a controlled temperature with a maceration of 12-15 days, during which frequent pumping over and punching down are carried out. The wine undergoes malolactic fermentation and matures in large barrels (80%) and used French barriques (20%) for one year.
