Bolgheri Superiore 2018 (magnum)
Bolgheri Rosso Superiore Grattamacco was one of the first 4 great red wines produced in Bolgheri in the new style underlying the development of the Bolgheri appellation. The other three are Sassicaia, Ornellaia and Michele Satta's I Castagni. The only one of these to include Sangiovese in the blend is that of Grattamacco, a choice specifically desired by Pier Meletti Cavallari and maintained by the new owners of the winery. The Bolgheri Rosso Superiore Grattamacco vineyards are located in a hilly position at 100-200 m above sea level, in the south-eastern part of the territory included in the Bolgheri DOC. The vineyards have an exposure in part also towards the interior, that is, opposite the sea and this favors higher acidity in the grapes which translates into freshness of the wine.
The harvest is manual. Sangiovese ferments in open truncated conical wooden vats with spontaneous yeasts. Merlot and Cabernet Sauvignon also ferment with indigenous yeasts but in steel vats. The wine then ages for 18 months in French barriques and one year in the bottle.
