The Manon label is produced by the Ravoire family, a local wine producer that has been dedicated to producing quality wines for years, respecting tradition and terroir. It is a wine produced with care, selecting only the best grapes and authentically expressing the characteristics of the Provençal terroir. The production of Manon Ravoire is a process that aims to preserve as much as possible the freshness and aromaticity of the grapes, typical of Provence. To limit oxidation of the grapes and preserve the aromas, the harvest is carried out at night. The grapes, mainly Grenache, Syrah and Cinsault, are harvested by hand and quickly transported to the cellar. The grapes are gently pressed to extract the must flower, the most valuable part of the grape juice, rich in aromas. Alcoholic fermentation takes place at low temperatures to preserve the freshness and fruity aromas. After fermentation, the wine is stored in steel vats for a short period to refine and harmonise the flavours. The wine is bottled ready to be enjoyed.
