Marsala Vergine Riserva Secco Terre Arse 2006
Terre Arse represents the flagship product of the Florio winery. It is a long-aged dry Marsala of the Vergine type, that is to say it is produced with no addition of cooked must or mistella, but only wine spirit. It makes the wine dry and golden, suitable to be tasted between meals as a meditation wine, or to be paired with tasty dishes based on bottarga, smoked fish and aged hard cheeses. It is appreciated for its power and for its taste rich in flavors and saline sensations. The Grillo grapes are harvested in the coastal strip north of Marsala almost near the beach; the vineyards have arid soil with limestone and siliceous elements; the plants are bust-trained. The climate of the area is dry and hot in summer influenced by African winds.
The harvest is manual at the end of September, when the grapes are almost at the overripe stage. The grapes are pressed and the must ferments in steel vats at a controlled temperature. Fortification takes place with the addition of wine spirit up to an alcohol content of 19%, after which the fortified wine ages in large oak barrels for at least 10 years.
