Zymé is an important winery in eastern Valpolicella, founded by Celestino Gaspari in 2003 in the Illasi valley starting from not even one hectare of vineyard. Today it has 30 ha , in several areas of Valplicella and also outside Valpolicella; it produces 120,000 bottles a year of undoubted success.
Very young Celestino married the daughter of Giuseppe Quintarelli, considered the noble father of Valpolicella wines. Celestino worked for over 10 years in his father-in-law's winery, then he served as a consultant for many wineries before starting his own business.
Celestino's approach to the vineyard is not very interventionist, aware that five elements are needed to make wine: man, vine, earth, sun, water. He represented them in the company logo in the shape of a pentagon inside a vine leaf. Sustainability of production is an essential value for Zyme.
Zymé produces the traditional wines of Valpolicella but has linked its name above all to two wines, Harlequin and Kairos, obtained from blends, which includes over 15 indigenous varieties.
