Simonnet-Febvre
The Simonnet-Febvre winery has been producing wines in Chablis since 1840. It owns vineyards in the various areas of the appellation including Premier Cru and Grand Cru. It made the history of the appellation and the wines are made according to the traditional style. Since 2003 it has been in the hands of the renowned négotiant Louis Latour, who has decided to maintain its independence, however, recognizing its undoubted value and reputation. One of the strong points of the Simonnet-Febre winery is to produce the whole range of wines of the territory from Saint-Bris to Chablis Grand Cru and also has a range of Crémant de Bourgogne, unique in Chablis.
The vineyards of the Domaine Simonnet-Febvre amount to 15 hectares located halfway between Chablis and Beaune. The style of Simmonet-Febvre wines is that of purity, precision and verticality. They are sharp and mineral wines typical of the northernmost territory of Burgundy. In fact, the Chablis area is the coolest in Burgundy and the wines have great acidity. The grape variety cultivated is Chardonnay, which has its roots in a very ancient limestone soil, from the Jurassic period. This combination of harsh climate and calcareous soil is the basis of the personality of the wines.
