    Letrari's Dosaggio Zero Riserva sparkling wine is an elegant version of vintage Trentodoc, to be appreciated for its executive accuracy, the purity of the bouquet and the frank taste with no dosage. It always conquers critics and experts for its evolved and round taste, which does not mask the fresh tension of an undosed sparkling wine. The selection of Chardonnay and Pinot Noir from vineyards on the hills of Vallagarina is the key element for such a result; in fact, the surrounding mountains determine a cool and breezy microclimate.

    The harvest is manual and the grapes are quickly brought to the cellar where they are immediately gently pressed and the free-run must ferments in stainless steel vats at a controlled temperature. The base wines stay in steel until the moment of creation of the cuvée. Aging on the lees in the bottles is 60 months. No sugar is added during disgorgement and capping.

    Suggestions

    It can age a few more years. It is recommended as an aperitif or with fish main courses. Try it with grouper ravioli with butter and sage.
