The grapes grow in hilly terrain, with limestone soils and a Mediterranean climate, giving the wine a distinctive character. Harvesting is done manually to select only the healthiest and ripest bunches. This step is essential to guarantee the quality of the grapes and, consequently, of the final wine. After the harvest, the grapes are separated from the stems and gently pressed to extract the must. The must is left to macerate at low temperatures for several hours. This stage allows more intense aromas and scents to be extracted from the fruit. The must thus obtained is transferred to stainless steel tanks where alcoholic fermentation takes place at a controlled temperature. This phase transforms the sugars in the must into alcohol and carbon dioxide. After fermentation, the wine is aged on the fine lees for several months. This process gives the wine more complexity and structure and finally, the wine is bottled and left to rest in the bottle for a variable period before being marketed.
