Tenuta Dodici's Solo comes from vineyards in the Maremma hills, an area characterised by a Mediterranean climate that gives the wine a special elegance and minerality.
The undisputed protagonist is Vermentino, a white grape that best expresses its aromatic and fresh characteristics in this area. Once the grapes have been harvested and selected, they are placed in a special cold store at a temperature of 4°C. It is then destemmed and placed in an inert (oxygen-free) press where it undergoes 2 to 6 hours of cryomaceration. At this point, pressing begins. The liquid obtained (about 50-60%) is collected in a steel tank and brought to 5°C for static clarification for 12-24 hours. Once cleaned, the must is brought back to a temperature of 12-14°C and selected yeasts are inoculated. At ¾ alcoholic fermentation the wine undergoes a racking and the F.A. takes about 20/30 days to finish.
